Typically, who owns AI models (weights etc.) created during challenges?

We are considering creating a challenge using a proprietary data set, the question arose as to who typically owns the trained model following the compleation of the challenge. I would appreciate any insight anyone could share.

That's a question you would need to discuss with a lawyer.

I am not a lawyer, but on Grand Challenge we encourage the use of open training data released under Creative Commons licenses, and the development of Open Source Algorithms that use OSI/FSF approved licenses where these sorts of questions are already answered and tested.
